Roberto Terradillos

I was born in Palencia in 1986, and I have to admit that ever since I was a little boy, my greatest distraction has been to surround myself with pots and recipe books.

I graduated as a kitchen technician at the Ntra Hospitality School. Lady of Guayente, in the Aragonese Pyrenees, and consolidated my training, throughout my first years as a professional, in the kitchens of restaurants of international reference such as El Hermit (1*), El Celler de Can Roca (3*), Akelarre (3*), Nerua (1*) or Fat Duck by Heston Blumenthal (3*) in London.

After years of training in different kitchens, it was time to return to my homeland and give shape to what will undoubtedly be my most personal project. At Terra Palencia, I have focused on compiling everything I have learned throughout my professional career, giving it my particular point of view and in which my origins are very clear. A revised traditional recipe book in which the product of the area is paid homage to.

I am a (self-confessed) workaholic, and I am very lucky to have turned my passion and hobby into my profession.

I try to surround myself with local producers with whom I like to maintain a very direct relationship, always avoiding intermediaries. I believe that this is the only way to get a good product, fresh and in optimal conditions.
